Today is my three-year vegan anniversary. I love celebrating this day! It's hard to imagine not being vegan. My life has changed so much because of my choice to be veg...so much more than I could have ever anticipated, and I love it! I've not only seen positive changes in my health, but being vegan has really heightened my compassion and love for animals, people, and life in general. I've also been able to witness my family becoming more aware of what they're eating just by being around me. It's such a delight when they ask me food questions and when I surprise them with some amazing vegan dishes. My grandmother still raves about a vegan zucchini bread I made for a car trip we took last summer. :)So, I celebrate the animals today. Most of why I do what I do is for them, whether they are 'pets' or victims of the animal industry. They're all precious to me, especially this one:
Also, as you know, this is day one of my raw vegan month! I did make a few things in the dehydrator over the weekend and plan to show pictures at the end of the week. But today I made a raw fruit tart to take to my small group potluck and everyone really liked it! The recipe is here and this was the finished product:
